Short answer: ripe yellow dragon fruit simply contains more natural sugar. In lab measurements it reached about 21 °Brix, compared with about 13 °Brix in the common pink-skinned, white-flesh dragon fruit.

What is °Brix?

°Brix measures the soluble solids in a fruit's juice, which are mostly natural sugars. Growers use it to judge sweetness and ripeness: the higher the number, the sweeter the fruit tends to taste.

The numbers

  • Yellow dragon fruit (Selenicereus megalanthus): a 2019 study in Ecuador measured 20.74 °Brix in fully ripe, fully yellow fruit. The same paper cites earlier work reporting 20.1 °Brix for the Palora type from Ecuador.

  • Pink dragon fruit (Hylocereus undatus): a 2008 study in Mexico measured soluble solids rising to 12.6 °Brix as the fruit ripened.

These come from two different studies, with different farms and conditions, so treat the comparison as a guide rather than an exact head-to-head. Still, the gap is large and it matches what people notice when they taste them side by side.

How to pick and eat yellow dragon fruit

  • Choose fruit that is fully yellow, with little or no green.

  • It's ready when it gives slightly to a gentle press.

  • Chill it, cut it in half and eat the flesh with a spoon. The black seeds are edible.
